PETIT CHABLIS 

Chardonnay

​OUR PRODUCTION  AREA: 12 ha

CLIMATS: Côte de Fasse, Envers de Talvat, Beaumont, Vignes de Fasse, Vallée Missigile, Chatillon, Cotât Topart, Sur Savant, Sur Vau Ligneau, Le Haut du Vau Sendrier, Sur Mont le Vau.

WINE MAKING: traditionnal in stainless steel wine vat.

Its freshness and vivacity make it very pleasant and fruity. This wine is drunk young, ideally after 2 years.

Serving temperature: 12 - 13°C.

Ideal wine as a pre-dinner drink. Try serving it with savory puff pastries (gougères), crustaceans, withe meat, goat cheese …

CHABLIS 

Chardonnay

OUR PRODUCTION AREA: 6 ha

CLIMATS: Côte de Fasse, Adroit de Talvat, Vau Poilet, Sur Trouemes.

WINE MAKING: traditionnal in stainless steel wine vat on fine sediment 6 /12 months.

The colour is rather light. The nose is very fresh, lively and mineral. Long an likeable persistance leads to a smooth and serene finish. Very dry and delicate. This wine is drunk ideally between 2 and 5 years.

Serving temperature: 12 – 13 °C.

It can be enjoyed with fish, seafood, the famous Ham « à la chablisienne » …

CHABLIS "Cuvée Paul" 

Chardonnay

OUR PRODUCTION AREA: 6 ha

CLIMATS: Côte de Fasse, Adroit de Talvat, Vau Poilet, Sur Trouemes.

WINE MAKING: in oak barrel on fine sediment 6 /12 months.
 

The colour is gold. The nose is sligthly woody with notes of vanilla. Ageing the wine in oak barrels alows the wine to mature and to fully express this note of vanilla by maintaining the typical minarlity of chablis wines.
Long and likeable persistance. Very dry and delikate. This wine is drunk ideally between 2 and 5 years.
Serving temperature : 12 – 13 °C

It can be enjoyed with fish, seafood, the famous Ham « à la chablisienne », The « Cuvée Paul » glorifies cheeses. (ex. Comté)

CHABLIS PREMIER CRU Vau de Vey 

Chardonnay

OUR PRODUCTION AREA: 0,8 ha

CLIMAT: Vau de Vey

WINE MAKING: in stainless steel wine vat and 25% in oak barrel.

Bright gold in colour. Highly complex wine and therfore highly adaptable. Well built and long in the mouth developing delicate and subtle aromas with age. Wine for aging: 2 – 5 years
Serving temperature : 12 – 13 °C
Good matches will include oysters, fish in sauce, a nice poultry.

BOURGOGNE rosé 

Pinot noir

OUR PRODUCTION AREA: 0,42 ha

CLIMAT: Les Veaux

WINE MAKING: traditionnal in stainless steel wine vat

Fruity wine (red berries) and pleasant.

 To drink young, within 2 years

Serve between 8 and 10°C

 To drink with rather delicate and moderately aromatic dishes: vegetables in salad, pies, poultry, fish. In summer, to accompany your appetizers and barbecues

CRÉMANT DE BOURGOGNE Brut

Chardonnay

OUR PRODUCTION AREA: 0,30 ha

CLIMAT: Cotât Topart

WINE MAKING: traditionnal.

The wine is drunk young, ideally after two or three years.
Serving temperature: 6 – 8 °C
Drink it with friends for Aperitif or Dessert.
